This Brillat-Savarin is sourced young and aged for us by Chantal Plasse. Situated in the French valley of the Grand Morin, the small town has a population of 800, and the lush grasses grown by the river succinctly turn into dense, high fat milk after the local cattle have their fill. Brillat-Savarin is a tripel creme made with unadulterated, unenriched full cream so it achieves totality in decadence. Every element of this cheese sings with specificity; from the dense but immediately dis-solving belly of the beast, to the flowing outer edges where the affinage has begun to break down the paste, to the rind which blankets the cheese like fresh snow.
