About Chiriboga Blue

Blue veined, organic cow milk, aged 3 weeks

It’s important to note that this is, in fact, a blue cheese, and not butter with blue veining masquerading as, you know, a blue cheese.
Produced from the less than 2-hour old milk of 30 local farms, each with a maximum herd count of 8 cows, Anton Chiriboga produces his namesake cheese at his off-the-grid creamery at the foot of the Allegau Alps in Southern Bavaria. Curiously, Anton introduces Penicillium roqueforti when he pierces the cheese after 1 week of aging. At 3 weeks, the cheeses are wrapped and begin their journey to us – making this the youngest blue we’ve ever worked with. The dense, rich paste tastes like salted butter ice cream kissed with juicy blue mold.
Ingredients: Pasteurized cow's milk, salt, cultures, rennet.
