About Fleur de Sel

“Le Guérandais” Fleur de sel is harvested in Brittany, France, in the Guérande salt marshes from June to September. Under the combined effect of the sun and strong winds coming off the Atlantic Ocean, the “paludiers” (salt-workers) harvest the flower of salt with a “lousse” (traditional tool) which they carefully work under the fine layers that crystallize on the surface of the water. Fleur de sel is fine and naturally white, with a slight scent of violets.
