Hugging the Mediterranean sea just north of Barcelona, sits the mountain village of Vilassar de Dalt. It’s here in the countryside of Spain, where devout cheesemaker Joseph Cuixart opened his esteemed creamery named Can Pujol. Can Pujol has a reputation for making excellent cheeses including Joseph’s signature cheeses, Nevat and Ombra. Ombra, meaning “Blondie” in Catalan, was named to suggest Joseph’s blonde hair and Ombra’s straw colored interior. This natural rinded wheel is coated with gray and brown molds and is aged for a minimum of 4 months. Its dense paste is dry and oily, and is frequently spotted with a snappy tyrosine crunch. This bright sheep’s milk cheese has a tangy subtlety overlain with a fresh citrus acidity and is emphasized by a nutty and herbal finish.
Ingredients: pasteurized sheep's milk, rennet, salt, cheese cultures.
