In the Liore Valley of central France celebrated cheese producer Fromagerie Jacquin has been traditionally crafting AOC protected cheeses for over 60 years. Their version of Selles-sur-cher is a convincing replication of this raw-milk native.    Pasteurized goat’s milk is used in this low rennet, high lactic acid coagulation, which can take up to 16 hours or more. This slow coagulation builds bright flavors and leaves a finishing texture that is more tender and delicate than when only rennet is used. Once the curds have been hand ladled into molds, the fresh discs are cloaked in a mixture of salt and wood ash that encourages external molds to grow, hence the tiny puffs of light blue and grey. The steely ash rind enrobes a pure white paste of varying ripened stages. Its dense, creamy paste inevitably coats your tongue with a pleasant lactic tang and sweet hazelnut finish.
