Raw organic farmstead goat, matured in red wine, aged 3 years

Aged for 36 months in high humidity cellars and then immersed in Monastrell wine for its final 40 days of affinage, Alma De Cerron is deeply flavored and surprisingly juicy for being a 3-year old. This is the longest aged goat cheese we’ve ever seen and it’s a glorious conundrum. The off-white paste is unbelievably rich with deep notes of toasted nuts and a sweet coffee ice cream finish.
