Willi Lehner has been making cheese all his life. He is Swiss American and his father was a Swiss born cheesemaker, so Willi grew up around the vat. He went to Switzerland to study cheesemaking and returned to the US to start Bleu Mont Dairy in the mid 80's. Willi is a nomadic cheesemaker, using other peoples make rooms to produce his award winning cheeses that he then ages off at his self built "cave" on his off-the-grid property near Blue Mounds, WI. These are truly American unicorns!
