About Wagyu Bresaola

Established in Denver, Elevation Meats is bringing old country and traditional cooking methods combined with innovative new flavors to customers there and in select cities in the U.S. Their Bresaola is made with wagyu eye of round beef sourced in Missouri.
Seasoned with Red Wine (which adds a depth of flavor and deep color), Bay Leaf, Black Pepper and Juniper, the meat is packed in salt and herbs and massaged daily for one week, then moved to a drying room and cured for 2 weeks at 60 degrees until the desired flavor and texture is achieved.
Ingredients: Beef, wine, sea salt, natural flavors, spices.
