Couple Marci Ebeling and John Shuman founded Cascadia Creamery in the pastoral town of Trout Lake, Washington,  bringing cheesemaking tradition back to the region. Their A2/A2 milk comes from a fourth generation family farm that has been antibiotic free and certified organic for decades. John makes all of their raw milk cheeses and ages them in an ancient, naturally formed, underground lava tube cave. The cave temperature and air flow are ideal for affinage, and the results speak for themselves. We are currently offering their cheeses by preorder only, but the extra effort to order in advance is well worth it. These cheeses are stunning. Look for our Northwest preorder form.
