Produced in Île-de-France, Fougerus is a soft bloomy rinded cow’s milk cheese created by cheesemaker Robert Rouzaire (who also created Pierre Robert) with milk sourced from 20 local farms. It’s a type of Coulommiers, which is the lesser known ancestral predecessor to Brie and is traditionally smaller and thicker. Its name comes from the French word for fern, fougère, and is easily recognized by its decorative fern frond, gathered from the Loire Valley, which graces its surface. The slightly “foresty” rind of Fougerus has an aroma of moist cellar and mushrooms and an interior that glows a beautiful straw colored yellow. Its silky paste coats your palate while distinct flavors of butter, nuts, earth and sweet cream persist.
