The Girardi family first began making fresh mozzarella back in the 1930s in a small town called Gioia Del Colle, in Puglia, Italy. 3 generations later, in 1992, Vito Girardi moved his family to California with a dream of introducing the American palate to a truly fresh and authentic Mozzarella. The original Girardi family recipe was brought to Los Angeles, and the first iteration of Gioia Cheese Co. was born. Today the company is run by the 4th generation of Girardi cheesemakers, helmed by Francesco (Frank) Girardi. Their cheeses are made to order every day without any preservatives. They are extremely fresh, but this also means they are extremely perishable. For this reason, we offer Gioia Cheese by preorder only. Place your order with us about a week ahead, Gioia gets to work making your cheese, we pick up, and then we deliver to you.
