Cypress Grove’s Lamb chopper is a firm sheep’s milk cheese recognized not only for its cute wax incased image of a “bah-d” sheep riding a motorcycle (hence the name), but was also awarded a silver in the 2010 World Cheese Awards! This sultry bold cheese is not quite like its slogan of “born to be mild”. When looking at it you tend to think it’s more of a pecorino, but no, Lamb Chopper’s sweet caramelized flavor is lively and captivating, similar to a gouda! You may also be a surprise to learn that owner Mary Keehn teamed up with a cheese-maker in Holland to produce this CA recipe, where sheep’s milk is more plentiful. It’s aged 3 months, which gives a nice tyrosine crunch, and echoes a balanced butterscotch quality.
