Lowry Hill Provisions is a salumeria based out of The Food Building in Minneapolis. Led by Erik Sather, they focus on pork-forward flavor profiles with low acidity and a delicate but coarse salami texture. Their line includes both small and large format salami, as well as smoked whole muscle ham. They regionally source clean, all natural heritage pork that is hormone-free and antibiotic-free. Their pork is all hand-trimmed, and their salami is hand-tied. Combined with their creatively selected flavor bouquets, these extra steps provide a noticeable difference in character, flavor, and quality.
You may remember Lowry Hill Provisions as the folks who took over Red Table Meats’ old spot in The Food Building in Minneapolis. Right before Red Table Meats closed permanently, Erik Sather, the founder and head salumist at Lowry Hill, spent a few months shadowing the Red Table team. When Red Table closed, Erik took over their production facility. Erik also hired 4 former Red Table employees to stay on with him. The Lowry Hill team of 6 now makes a variety of their own recipes in the old Red Table space, showcasing heritage breed, regionally sourced, clean pork salami in both classic and fun flavor combinations.
The Royal II is the passed baton of the meat world. As a parting gesture, Red Table Meats gifted this recipe to Lowry Hill. Delicately seasoned, cured and cooked with a mild smoke, this ham is one of the most popular meats we sell for good reason.
Lowry Hill Provisions created Hot Brando salami specifically for us! In fact, if you’ve ever heard tales of the elusive Brandon – our Purchaing Director here at Gourmet Imports – this salami was his idea, and Erik named it after him!
