Relatively new to the US market and imported first in 2004, Malvarosa is the creation of Enrique, a cheesemaker from Valencia, Spain, and his attempt to save a depleting breed of rare and native sheep, the Guirra. Intended for exportation, Enrique started producing Malvarosa in the unique “servilleta” style, or aged knotted in cheese cloth. This creates a distinct bunching look on the surface of the rind where the cloth sat bundled around the wheel as it aged for a  minimum of three months. It’s a striking cheese, but even more so, it flaunts exceptional flavor. Similar to Manchego, this paste is easily grated or shaved, but has more of a moist and light-weight mouthfeel, and it’s briny contrast of butterscotch and pepper makes you wonder how this breed was ever in fear of extinction.
Ingredients: pasteruized Guirra sheep's milk, rennet, enzymes, salt, calcium chloride, Lysosyme ( from egg), cheese cultures.
