Currently run by 18th generation Nomura-san, Horikawaya Nomura is a 300-year-old soy sauce producer located in Wakayama Prefecture. Just as his ancestors did, Nomurasan uses live fire for every step of the process: toasting the wheat, boiling the soybeans and warming the incubation of his house-propagated koji. The finished product is one of the world’s best condiments. Off the nose there is a sweet, fermented aroma with a slight hint of smoke and a deep, balanced umami – a truly remarkable brew.
