In the 1960s the Mons family began selling cheese at their local farmers markets in France. They soon went on to build their first aging room and enter into the art of affinage. In the 1980s, sons Hervé and Laurent joined their parents’ business, and Hervé took over their cheese aging and selection. Today the company is known for exporting some of the best French cheeses available in the US. Most of their cheeses are gorgeous examples of traditional French classics, but even their relatively new cheese innovations are rooted in historical cheesemaking. Years ago we used to carry a much wider selection of French cheeses, but ultimately we decided that we wanted to focus on a smaller range of really exceptional options. Mons absolutely represents that quality over quantity decision.
