Imperial stout washed goat tomme, aged 3 months

Like many washed rind cheeses, “The Mont” has a bark far stronger than its bite.
We’ve seen this cheese develop progressively since we started working with the inimitable Judy Shad – and in the past year this cheese has really turned a new and delicious corner. Judy started washing these cheeses with Lagunitas Imperial Stout – which results in a luscious paste and rich flavors running the gamut from sweet to savory and back again.
