Nocetto (NO-chet-toe) di Capra is a luscious and pleasantly tame bloomy rinded goat’s milk cheese from cheese-maker Ambrogio Arnoldi who is based in Lombardy, Italy. Made from milk of Orobica dairy goats which are indigenous of the local Bergamo Alps, this soft and silky gem does not resemble common goat’s milk cheeses, on the contrary, it’s mellow and sweet, more buttery than tangy, and has primary hints of mushroom and walnut. Aged for 1-3 months, this blooming beauty is a real stand-out and is ready for the limelight.
