A popular saying goes like this, “If you can’t fall asleep then close your eyes and start counting sheep.” With Nuvola di Pecora, which means “sheep cloud,” it’s never been easier to fall into a trance of lactic dreams. Crafted in the Emilia-Romagna region, which protects a fertile flood plain valley along the River Po (the longest eastbound river in Northern Italy), this stunning square of ivory sheep’s milk is aged for 30 days, giving it just enough time to form a paste dotted with tiny eyes and a rind that’s thin and bloomy. This custard-like center flaunts complex barnyardy flavors of damp caves, root vegetables and mushrooms, while finishing with a bright and fruity lactic tang.
