Judy Shad, domestic cheese legend & the force behind Capriole, has produced handmade goat’s cheese in Southern Indiana for nearly 40 years. Fun fact: Judy’s apprenticed for a time under our Affineuse, Chantal Plasse! O’Banon is her southern riff on Banon de Provence – fresh chèvre wrapped in Bourbon soaked chestnut leaves. Yum!
