Tapioca Maltodextrin

This white powder is derived from tapioca and has no taste to a slightly sweet taste. It’s used to turn high oil or fatty food substances into a free flowing powder with a very low bulk density. Maltotextrin is a dextrose (plant sugar) polysaccharide which encapsulates and thickens fats until it comes in contact with water which then results in it releasing that fat/oil. Ratio is one part oil substance, two part tapioca maltodextrin. Combine in a robotcoupe then pass through a tamis.
