This little ball of butter is the best triple crème we’ve tasted in years. Its dense, creamy paste, is packed with flavor way beyond the usual profile associated with this style. Onions, brassicas, and a slight sweetness rounds out the enriched cream. The rind brings it all together with a quick snap of fresh mushrooms and a delicate pepperiness from the candidum. Produced by La Fromagerie Delin, a small producer known in France for its Brilliat Savarin style cheeses, the young cheeses are spirited away to Tours before they bloom. There, Rodolphe le Meunier ages them for 3 weeks in his cellars where they develop a perfectly thin rind.
