Pectin NH is a type of pectin that has been modified to be thermally reversible. The more calcium in a gel the less able
that gel will be to melt. NH Pectin can be reshaped and remolded, and is mostly used to create your own glaze or layers in entremets. Recipes that use pectin NH have both less sugar and require remolding.
