Florida-based fish smokers Hickory House employ time honored techniques when producing their boneless, hickory-smoked Idaho trout fillets. Sourced from a quality certified and environmentally conscious farm in Soda Springs Idaho, this trout is raised with the purest Idaho underground aquifer spring water and a rigorous focus on fish welfare conditions. To help enhance flavor and lock in moisture, a brine of salt and brown sugar is used before each fillet is hot-smoked over hickory chips to an internal temp of 145° for 30 min. No additives or sodium nitrates are ever used. Fully cooked and ready to serve, each moist & flaky fillet averages 5oz. Each pack contains roughly 8 fillets.
