Produced from the raw milk of a herd of 30 registered Jersey cows, Tarentaise tastes of the Alps but it’s made in central Vermont. The production takes place on Spring Brook Farms – a working farm set up as an educational foundation to give urban raised children a way to learn all about where great food comes from. Milk is gravity fed straight from the milking parlor into custom made copper vats which are imported from France. The milk is then gently heated, strained, and pressed into wheels that will mature in Spring Brook’s cellars for an average of 8 months. This marvelous cheese boasts flavors of Dulce de Leche, toasted bread and roasted cashews.
This week we found out that Tarentaise Reserve won Best of Show at 2014 ACS competition in Sacramento!!!
