About Ice Cream Stabilizer - Cremodan 30

Cuisine-Tech Ice Cream Stabilizer is a hot-process stabilizer and emulsifier for Ice Cream. Requiring only a very low dosage (0.5%) this product enhances & preserves texture & creaminess and improves overall mouthfeel by minimizing the formation of ice crystals. Cremodan 30 will also help guard against temperature shock (IE removing/returning your ice cream from the freezer during service). Easy to use: simply add the stabilizer to other dry ingredients or make a small slurry with some of the liquid base and then combine the balance and mix well.
Ingredients: Mono & diglycerides, sodium alginate, locust bean gum, carrageenan, guar gum & sodium dioxide added to prevent caking.
