Raw cows milk farmstead cheddar-sorta-kinda, aged 18 months minimum

Hailed as one of the best of the “new generation” of English artisanal cheeses, Lincolnshire Poacher is and ISNT a farmhouse cheddar – or rather it’s a farmhouse cheddar recipe developed with the assistance of a Welsh cheesemaker, who learned their craft in Switzerland. Phew. Neal’s Yard’s Affinage wizards select these cheeses at the farm around 12 months old, then secret them in their London Dungeon for another 6-12 months. The cheese is bold with spicy, meaty, nutty flavors and a sprinkling of acidic fruit flourishes.
