Run by ex-shepherd Louis Madec and his partner Camille Condon-Madec, Les Saloirs de Louis selects and ages cheese from about 40 families in the Bearn Valley in the Pyrenees. These cheeses are very true to the region and stand apart from their more industrial counterparts. The fresh cheeses are entrusted to Louis and Camille, who care for them in their cellars, working to mature them slowly and under ideal conditions. Each wheel is regularly turned and brushed with salt water by hand. Their primary objective is to respect the product, traditions, and terroir of the cheese, and to help it mature to its full potential. Gourmet Imports is the sole importer of Les Saloirs De Louis into the United States.
